Sparkling Cider is a Methode Traditionelle sparkling apple cider: We hand pick bitter-sweet cider apples, crush and ferment the juice once in stainless steel and then again in the bottle. The cider then spends at least 18 months maturing in the bottle (on the Lees) before being hand riddled and disgorged to remove the yeast leaving a wonderfully clear cider with a rush of tiny bubbles when poured.
Delicate hints of brioche with a clean, crisp dry finish and a little tannin to enliven the mouth.
Bottle fermented and some natural sediment may remain. Serve chilled on any fun occasion or with a light dish such as a sushi, Camembert, a light meat or vegetarian dish.

Colour: A beautiful warm gold colour with a subtle mousse.
Aroma: Lifted and crisp cool climate apple aromas rise from the glass; fresh baked apple pie, straight from the oven, with red apples, pastry and a wreath of spice.
Palate: This cider is all about mouth-watering crispness, zest and cool climate natural acidity. The fleshy apple flavours wrap themselves around a pronounced linear structure that gives
excellent length of flavour and prepares the mouth for food. As an aperitif, this is perfect. It is a very dry cider that makes you reach for something to eat, and another glass.
First time I tried this I was pleasently surprised, I was given a bottle and it spent a year in the fridge in my cellar, only because it was a large bottle. The two guys I shared the taste sensation with thought it was a standout. Now Im hooked!!
Hi Ralph, we are so glad you enjoyed it. A lot of work goes into it but it's a lovely drop. The Cider Austrlia judges agreed with you and gave it a silver a couple of weeks ago. So happy!!
A very nice sparkling cidre, a bit low in alcohol content for my taste (I am a bit of a Scrumpy man myself)! Slighly acidic but lovely flavour
Thanks, David. Really glad you enjoyed the flavour. The alcoholic strength does vary a bit from year to year depending on how much sun the apples get etc. 7.5% is pretty strong for a cider mind you!
